Tuscan-Style Tuna Salad
2(6oz) cans Starkist chunk light tuna, drained
1 (15 oz) can cannellini or great northern beans, rinsed
10 cherry tomatoes, quartered
4 scallions, trimmed and sliced
2 tbsp. Meijer extra virgin olive oil
2 tbsp. lemon juice
1/4 tsp. salt
freshly ground pepper, to taste
Combine tuna, beans, tomatoes, scallions, oil, lemon juice, salt and pepper in a medium bowl. Stir gently. Refrigerate until ready tos serve.

Chipotle Turkey Wraps
1/2 cup Hellmann's light mayonnaise
2 tbsp. chopped fresh cilantro
1 green onion, finely chopped
1 tbsp. minced canned chipotle chiles in adobo sauce
1 tsp. fresh lime juice
2 (10 inch) La Tortilla factory multigrain tortillas
8 oz. Healthy Ones Deli Turkey Breast
2 leaf lettuce leaves
Combine mayonnaise, cilantro, green onion, chipotle chiles and lime juice in small bowl; stir to blend. Season chipotle mayonnaise with salt if desired. Arrange tortillas on work surface. Spread each with half of mayonnaise; top with turkey and lettuce. Roll up tortillas tightly, enclosing filling. Cut each wrap in half to serve.

Apple Bran Muffins
1 1/2 cup Meijer all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/2 cup Meijer sugar
2 tbsp. margarine, softened
1 1/2 cup Mott's plus light harvest applesauce
2 egg whites
2 tbsp. molasses
1 1/2 cup wheat bran flakes cereal
Preheat oven to 350 degrees. Line 12 (2 1/2 inch) muffin cups with paper liners or spray with nonstick cooking spray. In a large bowl, combine flour, baking powder, baking soda, salt and nutmeg. In medium bowl, beat sugar and margarine with electric mixer at medium speed until blended. Whisk in applesauce, egg whites and molasses. Add cereal; stir until moistened. Stir applesauce mixture cups. Bake 25-30 minutes or until toothpick inserted into center comes out clean. Immediately remove from pan; cool on wire rack 10 minutes. Serve warm or cool completely.

Tropical Fruit Jell-O Mold
2 1/2 cups boiling water
1 pkg. (8 serving size)Jell-O strawberry flavor sugar free gelatin
1 cup cold Meijer orange juice
8 oz Del Monte pineapple tidbits in juice, drained
11 oz Del Monte mandarin orange segments, drained
Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in juice. Refrigerate about 1 1/2 hour or until thickened (spoon drawn through leaves definite impression). Stir in fruit. Spoon into 6 cup mold sprayed with cooking spray. Refrigerate 4 hours or until firm. Unmold.

1/2 cup Mott's Plus Light apple juice beverage
1/2 cup crushed pineapple in juice
1/2 cup crushed ice
1/4 cup light coconut milk
Place all ingredients in blender; blend unti smooth. Serve at once.
